Fresh-made Almond Milk
There are a variety of milk alternatives in stores now and the one we love is almond milk.
One of the reasons we love it is, other than the obvious nutrition of almonds, it seems to have a thicker consistency than rice milk. It comes in regular or vanilla. It is even great in coffees and teas. I have been making my almond milk for some time now and have turned that job over to my six year old.
Almonds are considered one of the most nutritious nuts. They are a rich source of protein, fiber, vitamin E, omega-3 and omega-6 fatty acids, calcium, magnesium and zinc. All of which are micro nutrients your body needs and the best source of getting these nutrients is through a plant-based diet. Real fruits and vegetables.
Soaking almonds over night only increases their nutrition. To soak almonds over night rinse the almonds and double the amount of water for the amount of almonds you plan to soak. (1 cup of almonds to 2 cups of water) Cover the dish with a towel. Soak 8-10 hours at room temperature. In the morning rinse the almonds thoroughly.
Benefits of soaking almonds:
- Almonds are difficult to digest because of their brown coating, which is an enzyme-inhibiting substance that protects the nut until it is ready to grow. Soaking breaks down this coating, removes toxic enzyme inhibitors and breaks down gluten which helps digestion become easier.
- It also makes them softer and easier to chew up, which also aids in better digestion and easier absorption of nutrients.
- Soaked almonds are highly nutritious and a great source of energy for pregnant women and their unborn baby.
- Soaked almonds also increases intelligence and memory due to it being rich in essential fats.
Be aware when soaking pasteurized almonds, they may turn black and rot. Test a small batch first. Check your local health food store for raw unpasteurized almonds. I get my raw almonds from Sams Club.
So, whether you soak your almonds to snack on in the morning or for blending and making milk, soaking is the best way to eat raw almonds.
However, there are some days when I did not plan ahead to soak my almonds and…I just threw them in the blender with the water and presto… milk. That is okay too. Don’t put off eating almonds because you forgot to soak them. Try again next time. At least you are eating them.
- 1 cup almonds (soaked)
- 4 cups water
- Blend the almonds and water at full speed until all chunks are gone. For a blendtec I will use the Whole Juice button.
- Using a milk bag, cheese cloth or even a small-holed strainer, strain the milk. Let the milk set awhile to drain.
- Store your almond milk in a glass container and use with in 3-4 days.
- Hint- you can write on a glass jar with a Sharpie Marker the date you made your milk. The markings scrub off with little effort when hand washing the jar.
Use a small strainer for the almond milk
For added flavor to your Almond Milk add:
- maple syrup
- nutmeg or cinnamon
