One of the best parts about summer time is having a Popsicle. The weather is heating up and the days of swimming are upon us…as are the “Mommy, can I have a Popsicle?”.
There is nothing like having a Popsicle poolside after a great game of Marco Polo.
But, do I really want to pump my precious children full of sugar and High Fructose Corn Syrup? NO WAY!
I often skirt by the colorful sugar water packaged in plastic tubes in the grocery store and promise myself I will made frozen treats when I get home.
This is what I have come up with and the little ‘water bugs’ said this one is a keeper. After they scarfed down their first pop, they asked for another one. Gladly, I said ‘Sure’.
The recipe is only: Apple juice and blueberries. Simple enough. And if you don’t have apple juice, use orange juice. Can’t go wrong there.
I blended 1 part apple juice to one part blueberries. I used 2 cups juice to 2 cups fresh berries and blended very well.
I poured the berry juice into Popsicle trays and stuck in the freezer. This made quite a bit and I had some left over after filling the trays, so we drank the rest with our lunch.
Once frozen, the pops are a bit soft and easy to get out of the trays, also the sticks were rather easy to pull out of the frozen juice, but we just ate them in the pool and the mess was a minimum.
- 1 part Apple Juice (natural, no sugar added)
- 1 part fresh Blueberries
- Blend juice and berries in your blender very well.
- Pour the juice blend into Popsicle trays and freeze until completely frozen (1 day).
Delicious and nutritious. Enjoy.
